Cherry Garcia has to be the most famous & liked flavor in ice creams. I like it too. As we go deep into the HEAT of summers in Vancouver {pft…smirks} ……lets just say we make Popsicle because we love them!! (This is my first summers in Vancity and I am coming straight from India (40 degrees) – therefore the smirky reaction to the “summers” of Vancouver)

This recipe is as easy as it can get – equal parts milk and cream whizzed with sugar or condensed milk and poured into Popsicle molds with stewed cherries and chopped dark chocolate. What?! I love making desserts like these – less effort great flavor!

You can change the consistency of the Popsicle by changing the ratio of milk to cream. If you like it more fudgsicle-ish then increase the amount of cream. I also love the addition of condensed milk to it as it adds richness, but if for some reason you cant use condensed milk (like you don’t have a can of condensed milk at home but still really want to make the recipe or all the condensed milk is sold out etc.) this recipe can be made with just sugar too. Serving 6 popsicle


1 cup whole milk

1 cup heavy whipping cream

1/4 cup sugar or condensed milk

1 cup fresh cherries, pitted and roughly chopped

1 1/2 tbsp sugar

2 tbsp chopped dark chocolate

  1. In a small pot add pitted and chopped cherries along with 1 1/2 tbsp of sugar. Cook on medium heat stirring frequently for 10 to 15 minutes or till the cherries  become soft and start to break down. Remove from heat and cool completely.
  2. In a blender whiz together cream, milk and condensed milk with 2 tbsp of cooked cherries.
  3. Divide cooked cherries equally into the popsicle mold and add some chocolate on top. Pour the cream mixture into the mold and sprinkle some more chocolate into each mold. Insert the sticks and freeze overnight.
