Green Mango + Green Papaya Salad – Mango Madness Month
Continuing with the Mango Madness Month – today I have a recipe for a healthy and flavorful salad. This salad has fresh flavors of mango, papaya and cucumber served over a bed of iceburg lettuce. Its the best thing to eat to beat the heat! Its full of so much water and vitamin C – it is a healthy recipe that you can whip up in no time, it is vegan friendly as well.
Its important to use raw papaya and mango for this salad because otherwise it will taste like a fruit salad on lettuce leaves and that is not really a great combination. I have been served papaya salad in restaurants with ripe papaya, trust me – it tastes really bad! I topped this salad with soaked rice but you can use roasted peanuts if you like that better. If using rice, you need to soak them in water for a couple of hours, then just dab them with some paper towel and sprinkle onto the salad. It is a nice addition and adds an interesting burst of crunch every now and then.
The dressing is pretty simple too, you just have to make sure that you are using a neutral salad oil – something that doesn’t have its own flavor. I have made some suggestions for the oil in the recipe below. This dressing will stay in the fridge for a few days so you can adjust the measurements and make more so that every-time you want to make this salad for dinner on a busy weeknight – all you do is arrange the salad ingredients and drizzle the ready made dressing. Things You Will Need:
1 head of iceburg Lettuce – roughly torn into bite size pieces
1 cup raw/green mango, cut into thin sticks
1 cup green papaya, cut into thin sticks
1 cup cucumber, seeds removed & cut into thin sticks
1/2 cup scallions, cut into 1 inch pieces
1 tbsp uncooked rice, soaked in water for a couple of hours
2 tbsp any neutral oil – grape seed, walnut or peanut oil etc.
2 to 3 tsp sesame seed oil
2 tsp apple cider vinegar
2 tbsp soy sauce
2 cloves garlic, minced
2 tsp honey or agave nectar
salt & pepper
Add all the dressing ingredients in a jar and shake well till all the flavors are blended well.
To arrange the salad
Take the rice that has been soaking in water for a couple of hours and pat dry on a paper towel. Keep aside.
In a serving plate arrange a bed of lettuce leaves.
Layer mango, papaya and cucumber.
Add some green onions or scallions and sprinkle some rice onto the salad.
Drizzle some salad dressing and serve right away.
