Chocolate Lava Cake

Chocolate lava cake is probably one of the most popular dessert and I can see why- it is soo rich and good! The molten chocolate in the center that oozes out as soon as you bite into it is what makes it so delicious- a perfect treat for chocolate lovers. I made this dessert with a hint of cardamom and coffee flavors giving the original recipe an interesting twist. Cardamom gives it a real rich flavor blending very well with the chocolate.

I used bittersweet chocolate in this recipe and I think it works best with the cardamom flavor, but I really encourage you to try it with your favorite kind of chocolate. White chocolate lovers should definitely try substituting the dark chocolate with white and it might actually taste better with cardamom than this recipe. I am a big fan of dark chocolate, so I almost never use any other kind of chocolate in dessert recipes.

I always thought that lava cake required a lot of time for preparation with endless ingredients and days of planning- but to my pleasant surprise it turned out to be one of the easiest desserts that I have ever made! It requires very few & basic ingredients, butter, eggs, chocolate, flour and sugar and very little time for prep and baking. The total time for making this dessert was roughly 30 min from start to end- it cant get any simpler than this!

Things you will need
2 eggs
1/4 cup all purpose flour
1/2 cup butter (1 stick)
1/2 cup bittersweet chocolate
1/3 cup sugar
1 tsp ground cardamom
2 tsp instant coffee powder
Preheat the oven at 350 F. Melt the chocolate and butter in a double boiler or in the microwave and cool till it reaches room temperature. Beat the eggs and sugar with an electric mixer till it turns into a pale frothy mixture, approx 4 min. Add the melted chocolate and butter mixture and mix well but lightly with a spatula. Add flour, cardamom and coffee and mix lightly till its all combined well and forms a batter like consistency. Pour into buttered ramekins and bake for 10 to 15 min. Check at 10 min- you want the sides to be cooked and the center to be gooey. Take out of the oven and let cool for 3 min before unmoulding it. Serve it warm with vanilla ice cream or a vanilla sauce, Happy Baking!
